It’s the (fall) bee’s knees

– 3/4oz chai cinnamon honey simple syrup*
– 3/4oz lemon juice

There are so many warm and cozy flavors and vibes that come to mind in the fall – the turning of the leaves 🍁, the first of many fires 🔥, hot apple cider 🍎, pumpkins 🎃, chai, cinnamon… the list goes on and on. To help ring in the new season, we’re focusing this week’s cocktails on the many flavors of fall. And because the solstice falls on Bees Knees Week, we thought it only fitting to start with a variation to go along with the time of year. A typical bees knees calls for gin, honey simple syrup and lemon juice, and is a refreshing, light cocktail to sip on. Our variation substitutes a chai cinnamon honey simple syrup that we could honestly drink up all on its’ own. The other part of this that just screams fall is the way we rimmed the glass – with honey, pumpkin spice and sugar 🤤. Need we say more??…

To make: Add all ingredients to a shaker with ice. Shake and serve in a coupe rimmed with honey, sugar and pumpkin spice. Garnish with flower and cinnamon stick.

*For the chai cinnamon honey simple syrup, brew a strong batch chai tea. Combine 3/4oz chai tea and honey with a cinnamon stick and simmer until honey dissolves. Let cool before serving.
