I Believe I Can Fly
Ingredients
– 2oz gin
– 1/2oz maraschino liqueur
– 1/2oz creme de violette
– 1/2oz lavender syrup
– 1/4-1/2oz tonic syrup
– 3/4oz lemon juice
– cherry and lavender, for garnish

Coupe, Gin,Sometimes a classic cocktail like the Aviation is best served by the book. There is nothing wrong with the Aviation just the way it is, but as curious beings we like to experiment . And experiment we did. A classic Aviation calls for gin, lemon juice, creme de violette & maraschino liqueur. It’s lovely . But the beautiful color of this cocktail just begged for some lavender, so we added in a lavender simple syrup, shook our maraschino liqueur with butterfly pea flower tea, and finally in the name of research we added a bit of tonic syrup. BAM! Not saying we wouldn’t order another original but this twist was pretty dang good. We’re calling our variation “I Believe I Can Fly” – cuz if you never try, you’ll never know.

How to: Combine all ingredients in a shaker with ice. Shake and serve in a coupe glass. Garnish with lavender and a brandied cherry.
