This is the second beer released in our Tiki beer series. Piña Co-opa takes inspiration from, you guessed it, the Piña Colada. We started with a malt forward base beer that we aged for 8 weeks in St. Croix rum barrels to extract all of the oak, vanilla and molasses flavors from the wood. Next we re-fermented the beer with over 250#s of pineapple puree and a mound of coconut flakes. Finally we added just a touch of lactose sugar to bring out the sweetness of the coconut and turn this into a spitting image of the classic island beverage.
